My Weekend: 'Honestly...nothing beats a cosy night in'

Lauren says she likes to entertain at the weekend- her signature dish when friends come round is Korean-style chicken. 

Tell us a little bit about yourself and your work:

I’m originally from Banteer, a lovely village in North Cork, but I’ve recently settled in Glanmire, which has been a refreshing change of pace. Outside of work, I love playing badminton – I’ve been at it for years and, truth be told, I’m a little more competitive than I let on! It’s a great way to stay active and clear the head after a busy day.

I studied at University College Cork, completing a BComm and later a master’s degree, which gave me a solid foundation for the work I do now. I’m Head of Strategy at Cobh Heritage Centre, and it’s a role I genuinely love because it’s so varied. One day I might be planning a new exhibition or working on marketing campaigns, and the next I’m brainstorming ideas for family events — like our brand new Santa Visit Experience, which we’re really excited about. It’s the first time we’ve transformed the museum into a winter wonderland, and seeing it come to life has been incredible.

What’s your ideal Friday night?

Honestly, nothing beats a cosy night in with a good TV series or a great book – and, of course, a mug of Barry’s Tea. Superior beverage, no question!

Lie-ins or up with the lark?

Lie-ins all the way. Early mornings are overrated!

Does work creep into your weekend?

I try to keep a good work-life balance, but sometimes a little bit of work sneaks in.

If money was no object, where would you go for a weekend city break?

New York City with my mother — a shopping trip and a chance to soak up the buzz of the city.

Closer to home, where do you go to recharge?

I love a nature walk. Moanbaun Woods in Watergrasshill is a favourite spot of mine for clearing the head and recharging.

Do you catch up with family and friends at the weekend?

Absolutely — weekends are my time to reconnect. I love heading out for a walk and grabbing a coffee with family or friends. It’s a simple thing, but those chats over a flat white or a stroll in the fresh air are the best way to catch up on life and unwind after a busy week. Sometimes we’ll plan for brunch or pop into a local cafe for a treat — it’s all about slowing down and enjoying good company.

Do you get to indulge any hobbies?

Yes, I’ve played badminton for years, and it’s something I really enjoy. It’s a great way to stay active and clear my head after a hectic day. There’s something about the fast pace and focus of the game that makes you forget everything else for a while. Plus, it’s a fun way to keep fit and have a laugh with friends.

Entertain or be entertained? If you entertain, what’s your signature dish?

I like to entertain, and my signature dish is Korean-style chicken —always a hit!

Where are your go-to spots for coffee or a special meal in Cork?

Cloud 9 and Tara’s Tea Rooms for coffee, Vienna Woods and Market Lane for a lovely dinner.

How do you usually spend Sunday night?

I like to get organised for the week ahead — a bit of meal prep and laying out work clothes so Monday feels less hectic.

What time does your alarm go off on Monday?

Earlier than I’d like – around 7am!

Anything else you’re up to right now?

Yes! For the very first time, we’re running the Cobh Santa Express at Cobh Heritage Centre, and we couldn’t be more excited. We’ve transformed the museum into a magical winter wonderland, and it’s shaping up to be an unforgettable family experience. Inspired by train travel, the event takes families on a festive journey where they’ll meet Santa, wander through a sparkling winter wonderland, and even get creative with a craft station to make their own Christmas decoration to take home.

It’s all about creating those special Christmas memories that kids (and grown-ups!) will treasure.

The event runs from until December 22, and tickets are available at cobhheritage.com. It’s going to be a fantastic way to celebrate the season in one of Cork’s most iconic heritage locations – we can’t wait to welcome everyone!
