Tell us about yourself:

My name is Sarah Hickey, and I’m proud to have been born and raised in the scenic parish of Castlehaven in West Cork. I come from a large and loving family - my parents, Mary and Paddy Mullins, raised nine children: six sons and three daughters, of which I’m one.

I’ve been happily married to my husband, Kieran Hickey, for over 15 years. Together, we have four wonderful children: Thomas (14), Jamie (12), Aimee (9), and Alex (6). They keep us busy and grounded, and family life is at the heart of everything I do.

I am the Front Office Manager of the Cork International Hotel and I have worked in the hotel for almost 18 years.

Where were you born?

I was born in Cork.

Where do you live?

In the lovely village of Belgooly.

Family?

I come from a large family — six brothers and two sisters. I live with my husband Kieran and our four children, who bring us endless joy.

Best friend?

My oldest and dearest friend is Francine O’Thurnheer. We’ve been neighbours and close friends since we were babies. She now lives in Ballydehob, where she runs her own bakery and is a member of a band called Rubicon.

Earliest childhood memory?

Spending long summer days at Castlehaven Beach with my family and friends. My mother would always bring a flask of tea and a packet of Rich Tea biscuits — and I still believe that was the best cup of tea you could ever have!

The person you most admire?

I admire my parents immensely. Their love for one another is truly priceless. They are a fantastic team and raised nine children during very challenging times — their strength and unity continue to inspire me.

The person who most irritates you?

I genuinely try to see the good in everyone. Life is too short to dwell on irritation.

Most memorable holiday?

I’ve been fortunate to travel to some beautiful places, but South Africa stands out as the most memorable. I spent two amazing weeks there. My honeymoon in Mauritius also holds very special memories.

Favourite TV programme?

At the moment, I’m hooked on Yellowstone. I love the storytelling and the scenery.

Favourite radio show?

I really enjoy KC in the Morning on Red FM — it’s a great way to start the day.

Your signature dish if cooking?

Shepherd’s Pie – a comforting family favourite in our house.

Favourite restaurant?

The Church Restaurant in Skibbereen. The food and atmosphere are both fantastic.

Last book you read?

With a busy home and work life, I don’t often get a chance to sit down with a book. My time is usually spent juggling family activities!

Best book you’ve read?

It’s been a while, but I’ve always appreciated books that leave a lasting message — I’d love to get back into reading soon.

Last album/CD/download you bought?

I recently downloaded music by Tom Odell — his songs really resonate with me.

Favourite song?

At the moment, I’m loving Little Dreamer by Cian Ducrot.

One person you’d love to see in concert?

Kylie Minogue or Madonna — both are iconic performers with an amazing stage presence.

Do you have a pet?

Not at the moment, although my children would absolutely love one!

Morning person or night owl?

I’m definitely a morning person. I enjoy waking up before the kids, making a quiet cup of coffee, and taking a few moments to plan my day in peace.

Proudest moment?

Without a doubt, becoming a mother. Nothing compares to the joy and pride I feel for my children.

Spendthrift or saver?

You might want to ask my husband! But if I’m being honest… I’d say I lean more towards spendthrift, with good intentions, of course!

One thing you’d improve in your area?

I’d love to see more spaces for teenagers to socialise safely, or perhaps a playground for younger children to enjoy.

What makes you happy?

Seeing my children achieve their goals and follow their dreams brings me the greatest happiness.

How would you like to be remembered?

As someone who radiated positivity and always saw the good in others. I hope I can make a positive impact on people’s lives. I often tell my children: “If you’re going to speak about someone, say something that would uplift them.”

What else are you up to at the moment?

I recently joined the Clontead Mothers and Others GAA football team. The camaraderie among the ladies is absolutely brilliant, and I always come home from training in great form — it’s been such a rewarding experience.
