My Weekend: 'Life is best approached with a smile… and a little mud'

Tell us a little bit about yourself:

I’m a 59-year-old Cork man, proudly based in the rebel village of Tower, where life is never dull thanks to my wife Bríd and our three teenagers — Seán, Aoibhe, and Ruairí. Between school runs, sports training, and household chaos, the house is always buzzing. And, yes, they’re all sports mad, which means our weekends are a blur of chaos, laughter, and the occasional scream when someone takes one for the team.

During the week, I head up the road to Cahir, Co Tipperary, where I work with the HSE running a paediatric dental clinic. The smallies there keep me laughing and on my toes — no two days are ever the same.

Recently, our clan took on Ireland’s Fittest Family, coached by the larger-than-life and legendary figure Donncha O’Callaghan. Between the mud, the teamwork, and Donncha’s tough-but-inspiring guidance, we learned that family, determination, and a good sense of humour really can get you through anything.

Between the drills, dumbbells, and daily chaos, I like to think life is best approached with a smile… and maybe a little mud.

What is your ideal way to spend a Friday night?

Having dinner at home with the family after a long week to catch up. Curry is usually the call for a Friday night — the hotter, the better.

After that would be a Netflix binge on the latest series. Just finished House of Guinness.

Lie-ins or up with the lark... which is it for you?

Lie-ins don’t exist in my life. I am usually on the golf course at the weekend by 7.30.

Does work creep into your weekend at all?

Five-day working week and that is more than enough. Life is for living.

If money was no object, where would you head to on a weekend city break? And who would you bring with you?

My city of choice would have to be Galway. I travelled the world backpacking for two years, wide and far, but, for me, Ireland has it all.

Would have to bring the family, stopping at Lahinch beach and the Cliffs of Moher along the way.

Overnight in Galway — enjoy the city-centre vibe and then grab the ferry to the Aran Islands.

Everyone should visit Inishmore at least once with their kids. The prehistoric fort of Dún Aonghasa is a must, as is the ‘Worm Hole’ — a rectangular natural pool carved out of prehistoric rock.

This is my kids’ favourite destination because of the spectacular cliff diving they can enjoy there. Not for parents of a nervous disposition.

Closer to home, is there some place you like to head to recharge the batteries?

Locally, the Inniscarra Dam walkway and the Lee fields.

Further afield, Inchydoney beach and Rosscarbery pier for some pier jumping.

Do you like to catch up with family/friends at the weekend?

Love to catch up with my parents over a pot of tea and get all the news. Thankfully, both are in good health and have always been my rock to lean on.

The Huntsman, locally, is always a good spot for a pint with a few friends.

Do you get to indulge in any hobbies? Even as a spectator?

Play golf... poorly! I have been very lucky to have had the opportunity to manage the Munster Senior golf team with PGA lead professional Fred Twomey over the last few years. Spending time in a competitive sporting environment with elite athletes is highly rewarding but to do so with one of your best friends is the cherry on top.

Recently, I completed my first Hyrox with my son Sean. He finished third; I just about finished. A very humbling experience when your son is an elite athlete.

Entertain or be entertained? Do you have a signature dish?

Happy to do both, though definitely not Michelin-star material. My signature dish is Couch-Potato Casserole — takes zero effort and perfect for binge-watching nights.

Taco ‘Bout it’ — filled with gossip, drama, and a little cheese.

DIY Pizza of Regret — to be assembled at your own risk.

Desserts include Ice Scream (will chill your brain and awaken your anxiety) and Cupcakes of Composure (holding together... barely).

We have so many places to eat out in Cork. Where are your go-to spots for coffee/lunch/special meal?

Locally, the Strand Bar and the Anglers Rest for family get-togethers. They are both top-class.

The Market Lane would be the port of call in the city centre.

Sunday night comes around too fast... how do you normally spend it?

Sunday nights? Oh, that’s when I pretend tomorrow isn’t coming while binge-watching life choices and sipping on existential dread… lightly sweetened with snacks.

What time does your alarm clock go off on Monday morning?

Too early.
