Tell us a little bit about yourself

I’m Sadhbh Cosgrove, I’m 26 years old, and I’m from Cork!

I grew up in the city and then went to college in DCU, but now I’ve moved back to be closer to my family and start my own business.

I am also a part of New Frontiers in the MTU branch.

My business is Alternative Christmas Pudding, where we make Belgian chocolate Christmas puddings flavoured with liqueurs and spices.

What is your ideal way to spend a Friday night?

I’m a total homebody; night-in with a nice drink and a takeaway, and, usually, the night is spent on the phone with my friends and boyfriend.

Lie-ins or up with the lark.. which is it for you?

I prefer lie-ins all the way. I’m a complete night owl. (But I’m usually up with the lark)

Does work creep into your weekend at all?

Around the Christmas season it definitely does. It can’t be helped as things get busier and busier in to the season.

If money were no object, where would you head to on a weekend city break? And who would you bring with you?

My boyfriend and I love Korean food, so I would love to travel to Seoul!

I have a friend who lives there who I’m dying to see, too.

Closer to home, is there some place you like to head to recharge the batteries?

I don’t get out on walks a lot, unfortunately, but, if I could, I would certainly pick a beach.

Do you like to catch up with family/friends at the weekend?

I’m at that point of adulthood where trying to catch your old friends for a drink or coffee seems impossible, as no one’s schedules ever line up. Once Christmas is over, my schedule will be packed with coffee dates and chill catch-ups over pints!

Do you get to indulge any hobbies? Even as a spectator?

I love listening to music, and I have a lot of concert tickets lined up for next summer, which I’m excited for! I also got to see the F1 in Monza last summer. (Most of my hobbies get scheduled for our off-work season)

Entertain or be entertained? If it’s the latter, do you have a signature dish?

I think I stress out too much if I’m entertaining. I’ll happily go and be entertained and just help out where I can. If I did have to entertain, I think I’d prefer to do a spread: eg, a cheeseboard, cool snacks, and dressings I found at markets, and some nice drinks!

We have so many places to eat out in Cork: Where are your go-to spots for coffee/lunch/special meal?

Every time I make a delivery to the Marina Market, I get entranced by the smells and end up buying lunch there! Poulet Vous is a big favourite of mine. I’ve had some amazing food and coffee working at markets, as well; you can find a lot of interesting stalls you’ve never heard of before.

Sunday night comes around too fast.. how do you normally spend it?

Probably planning out the next week, trying to keep ahead of the curve!

What time does your alarm clock go off on Monday morning?

7am, then another at 7.30am, then another at 8am, etc.

Anything else you are up to right now...
