Top chef Schindler to lead Cork food heritage course

Internationally-renowned chef and experimental archaeologist Dr Bill Schindler will lead a new online course about food heritage and sustainable enterprise at UCC.

The 10-week course, entitled ‘Food Heritage in Action: Turning Tradition into Sustainable Enterprise’, will provide learners with practical tools to reimagine traditional and indigenous culinary practices and develop them into food projects that are ethical and economically viable.

Known for his TV appearance, co-starring on National Geographic’s The Great Human Race, Dr Schindler is a leading voice in reconnecting modern eaters with ancient food traditions.

Dr Schindler said in a world dominated by ultra-processed convenience, “the most innovative food solutions might come from the oldest diets”.

“This course is about bringing those ancient lessons into modern kitchens, farms, and markets in ways that respect culture, support sustainability, and create real economic opportunities,” said Dr Schindler.

The course, now accepting registrations of interest, will commence on April 1, at a cost of €600 per participant.
