Weekend Foodie: Sugar and spice for a special Sunday morning breakfast

These spicy scrambled eggs are sure to wake up your palette!
Sunday mornings are made for lazing around! If you’re lucky enough not to have to work on Sunday, it’s the ideal time to enjoy something a bit special for breakfast.
This weekend, I am digging out a favourite recipe for my Spicy Scrambled Eggs.
This dish is exactly what it says on the tin, good fresh free range eggs mixed with finely chopped courgette, spring onions and lime pickle - which you can add to your own taste. These ingredients are gently cooked together before adding the beaten eggs, and cooking for a few moments till they are still soft and moist. Spoon the whole lot onto buttered brown toast or bread of choice and its a breakfast to wake up you and the palate!
I’m following it with a luxurious sweet course based on toasted brioche, which is soaked in lashings of butter and topped with chopped nuts and blueberries before being drizzled with warm maple syrup. It’s a yummy finish to the meal which will keep you going till dinner time! You can also change the fruit here, from bananas to strawberries and any other fruit you fancy to top the toast. Be experimental - because there are hundreds of versions of this - depending on what you like yourself! You can also add natural yogurt on the side for topping.
- Knob of butter
- Splash of olive oil
- 1 large courgette, finely diced
- 1 bunch spring onions, trimmed and finely sliced
- 4 tsp lime pickle, or to taste
- 8 fresh free range eggs
- Sea salt and freshly ground black pepper
- 8 slices wholemeal toast
- Heat butter and oil in a non stick pan over low to medium heat.
- Add courgettes and spring onions.
- Cook gently until the courgettes are just beginning to caramelise and soften.
- While the courgettes are cooking, spoon the lime pickle onto a board and chop it a little, so you don’t get big chunks of lime in the eggs.
- Add to courgette mix in the pan and stir in.
- Beat the eggs with seasoning.
- Pop the toast in the toaster to brown.
- Add eggs to pan with courgettes and lime pickle and cook over medium heat for a few moments, stirring continuously, until cooked but still soft and moist. Stir in the basil.
- Serve the eggs on buttered toast. Scatter over some torn basil to finish.

Ingredients (Serves 4)
- 8 tbsp maple syrup
- 4 brioche rolls
- 2 generous tbsp butter, melted
- 4 tbsp chopped almonds
- 150g pack blueberries
- Gently warm the maple syrup in a non-stick pan, making sure to stir it. Remove from heat and keep warm.
- Halve brioche rolls and toast cut sides under a preheated grill till just golden. Turn over to toast other sides to just warm them.
- Drizzle brioche on the cut sides with melted butter.
- Scatter with nuts and blueberries.
- Drizzle the maple syrup over.
- Serve natural yogurt on the side if you wish.
You’re probably not going to want alcohol with this Sunday morning special! So I’ve gone to the choice of a fruit based smoothie instead. I recently enjoyed a trip to Doha in Qatar in the Middle East, where alcohol is not on the menu in most restaurants. But they do some great mocktails, smoothies and juice based drinks instead, which are amazing and vibrant in taste. We went for late breakfast to an amazing outdoor cafe, where I enjoyed a fantastic non-dairy cranberry, orange and strawberry smoothie. For one serving, simply place 100mls each of orange and cranberry juice in a blender and add a few hulled and halved strawberries to taste. Blend smooth and pour into a generous tumbler. Serve with a straw. Follow it up with a lovely cup of coffee such as the Signature Tastes Organic Peruvian Coffee, with its dark chocolatey and sweet caramel notes from Supervalu. This ground fresh coffee comes in at €4.49 for a 227g pack and can be used in a cafetiere or filter machine.
