Rob Krawczyk and his partner Elaine Fleming own the establishment which attained a Michelin Star just six months after opening.
Located in Ballydehob, the intimate 18 seater restaurant opens 10 months of the year.
In Monday's episode, Rob and his partner chat about their whirlwind year since opening and the pressures involved.
Rob can work in excess of 80 hours a week and says that passion is the driving force behind the success of the business.
He originally hails from Schull, where his love of food was sparked by his father, a local food producer.
Rob's father Frank knew Richard Corrigan and asked him to put Rob to work in one of his kitchens to learn the trade.
He then went on to work in a slew of incredible restaurants including Chez Panisse in San Francisco, Cliff House Hotel and Kevin Dundon’s Dunbrody House.
Having learned his new craft, Rob saved up to open his own establishment.
Restaurant Chestnut opened its doors in March 2018 and just two weeks after, a Michelin Star reviewer come in to eat and gave Rob amazing feedback.
“It reassured me that we were going in the right direction.
"Then six months to the day after opening we received a Michelin Star", he said.
Rob forages local ingredients and uses local produce in his restaurant.
He also likes to use different methods of cooking saying:
“When cooking I like to use a lot of technology, but I don’t want it to show through as I want to concentrate on the flavours of the food.”

This week, Mark and Rob create a unique menu with dishes inspired by the people and the places they have visited together.
